“Since childhood I have a passion for cooking. My father showed me a lot and always
inspired me. I even got some spanish blood from him thank you papa Oscar ! For all family
events and festivals everybody asks me to cook for them.”
Our mission
We find good fresh products on the local markets but they are poorly prepared with cheap or
missing ingredients. We want to surprise you with the authentic taste measurable on the inter-
national scale. For this we use the best recipies and use ingredients uncommon in Philippines.
The perfect taste counts, magic zapzarap is banned in our kitchen. We want to see the smile
in your face – this is our reward.

enjoyed the food in restaurants where only the locals go. I also like to visit the fishmarkets in
Philippines, but when I see what is “prepared” from the good products
in the restaurants I just have to cry.”

What we offer
We don’t have to hide in a backyard kitchen. With a live cooking show we show you the pre-
paration of classy dishes. We will bring everything to your place or to a beach, you just have to
invite your guests with good mood. Enjoy the taste of Seafood and Chicken Paella. You will
find more than only six lonesome shrimps in our Paella as it often happens to tourists in Spain.

Our Equipment
We use genuine Paella equipment produced in Valencia, Spain – where the Paella was born.
We use a 25 kW 3-ring burner for the big steel enameled pan which has 70 centimeters of diameter.
For the smaller pan with 42 centimeters of diameter we use a 15 kW 2-ring burner. We use “fiesta” gas
bottles because fiesta in spanisch means festival - and we will have a festival or not ?

Facts about some ingredients
Saffron
is the world's most expensive spice because each saffron flower is hand-picked to collect just
three red stigmas per flower. In the kitchen, saffron is most commonly used in soups, stews, as well as
seafood dishes such as bouillabaisse and paella.
Smoked Paprika
hails from Spain, which is why you’ll also sometimes see it is listed as Spanish
paprika or Pimentón de la Vera, which translates to paprika of the La Vera. This is a district in Western
Spain that is famous for its drying and smoking red peppers over an oak fire, then grinding them.
Star Anise
is a distinctive looking spice that resembles a small rust-colored star. It usually has be-
tween 6 to 8 points, each point containing a small seed that is the flavor epicenter. The spice gives a
sweet, licorice-y flavor to dishes similar to clove and aniseed.

Our presentation
We take care to present and serve our food in a classy way. We use ceramic plates, glass-
ware, imported wine glasses, cloth napkins and exclusive cutlery. Of course you could eat
Paella from paper plates with a plastic spoon, or with your hands inside a plastic bag from a
plateholder covered with a plastic bag. But then we are not the right partner for you, we
respect our food too much to have this happen. You don’t have to rent tableware from us, but
we have minimum requirements how our food is served and presented. Plastic is a NO GO !

Preperation and standards
We orient ourselves on international HACCP Standards. HACCP is a management system in
which food safety is addressed through the analysis and control of biological, chemical, and
physical hazards from raw material production, procurement and handling, to manufacturing,
distribution and consumption of the finished product. For example we use different
colored
cutting boards and knives for different types of food like fish, meat, poultry and vegetables to
avoid cross contamination. The color helps to keep equipment apart from each other. After
investigation of all products we defined rules and procedures how to handle and process them.

How we work
We can prepare the Paella live in any location of your choice. To comply with our standards
and sanitary requirements we will bring our own stainless steel preparation table. If requested
we can also bring the already cooked Paella to the beach like to Lambug or to Kansanto
springs.
