Our Equipment …
We use genuine Paella equipment produced in Valencia, Spain – where the Paella was born.
We use a 25 kW 3-ring burner for the big steel enameled pan which has 70 centimeters of diameter.
For the smaller pan with 42 centimeters of diameter we use a 15 kW 2-ring burner. We use “fiesta” gas
bottles because fiesta in spanisch means festival - and we will have a festival or not ?

Facts about some ingredients …
Saffron
is the world's most expensive spice because each saffron flower is hand-picked to collect just
three red stigmas per flower. In the kitchen, saffron is most commonly used in soups, stews, as well as
seafood dishes such as bouillabaisse and paella.
Smoked Paprika
hails from Spain, which is why you’ll also sometimes see it is listed as Spanish
paprika or Pimentón de la Vera, which translates to paprika of the La Vera. This is a district in Western
Spain that is famous for its drying and smoking red peppers over an oak fire, then grinding them.
Star Anise
is a distinctive looking spice that resembles a small rust-colored star. It usually has be-
tween 6 to 8 points, each point containing a small seed that is the flavor epicenter. The spice gives a
sweet, licorice-y flavor to dishes similar to clove and aniseed.
